Banana “escaping the bread and blender” pancakes

Let’s be honest, who does not want to give a more interesting second chance to a dying banana other than a bread or a smoothie? The coconut flour gives these pancakes a silky taste, they are filling and they scratch the sweet itch. You will not miss those doughy pancakes that rise your sugar levels to the sky! They travel easy to school and the office and you can go wild with toppings. This one goes to all of you who want to escape the breakfast monotony (and are banana lovers!) They take 15 mins flat to make and have 6 ingredients.

Ingredients (8 small pancakes - 15 minutes to make!)

-2 ripe bananas (the ones you forgot at the bottom of the fruit bowl)

-2 Eggs (pasture, cage-free, or organic are best)

-1 1/2 Tbsp of good quality vanilla extract (so it does not taste like alcohol!)

-2 Tbsps of baking powder (so they rise)

-4-5 Tbsp of coconut flour (it makes them lighter than almond flour)

-1/4 cup of almond milk (if nut free, you can use hemp milk)

Procedure

-Mash the bananas and set them aside

-In a bowl, crack and whisk the eggs, stir in the vanilla

-Add the bananas to the eggs mixture and give it a good mix

-Add in the baking powder and mix in the coconut flour

-Slowly incorporate the milk to have a more liquid mixture. This dough will not look like regular pancakes, but make sure it is not very hard. Use the milk to make it less dense, but you do not want it too runny either (easy, I know, but you will get me when you try them!)

-Heat a skillet in medium heat. Add a coat of coconut/olive or avocado oil (spray works great here!)

-Spoon the mixture into the skillet, make sure pancakes are not very thick so they cook through.

-Cook 2 minutes on each side. They are a little dark but they do not taste burnt!

-Serve with: raw honey, maple syrup (I feel they are sweet enough, but we all have a sweet loving person around that needs extra), seeds (chia, pumpkin, sunflower) and berries. Or nut/seed butters and cacao nibs, or…endless options. Enjoy!
